Drake's Mojito
A more modern Mojito uses rum in place of Pisco. But according to Duggan McDonnell, Sir Frances Drake invented this drink in 1579 while ashore in what’s now known as Drakes Bay, just north of San Francisco. Wild mint was abundant and he and his crew had just stolen a huge amount Pisco from the Peruvians on their circumnavigation of the globe.

10–15 | big spearmint leaves |
1 oz | freshly squeezed lime juice |
1 oz | simple syrup |
2 oz | soda water |
1 | mint sprig |
Lightly muddle the mint leaves in a highball glass. Add other ingredients with cracked ice and stir. Garnish with a mint sprig.
